Banana and oat bread

Method


Preheat the oven to 180c (gas 4). Mash the bananas until smooth, add the eggs and mix together. In a large mixing bowl beat the butter until light and fluffy.  Add the mashed banana and eggs then mix well. Stir in the honey and yoghurt. Keep stirring and add the flour and oats as you stir so they are well mixed in. Finally stir in the baking powder and cinnamon (and any of the optional extras). Line a loaf tin with greaseproof paper, pour the mixture into the tin and spread into the corners. Place in the oven for 45-50 minutes or until golden brown. To test whether the banana bread is ready push a cocktail stick into the middle. If it comes out clean it is done. Allow to cool fully before slicing.

Ingredients

  • 3 overripe bananas (or about 300g of frozen banana, defrosted)
  • 125g unsalted butter, softened
  • 2 eggs
  • 2 tablespoons natural yoghurt
  • 1 tablespoon honey
  • 250g self-raising flour
  • 50g porridge oats
  • 1 tsp ground cinnamon
  • 1 teaspoon baking powder
  • Optional extras: a handful of dried fruits or chopped nuts, or chocolate chunks
